Last night I made a list of things I was super excited to try out for my Whole 30 end celebration. I was really only introduced to the paleo lifestyle due to whole 30 so I haven’t had a chance to paleo-fy any desserts or treats. So naturally I went to bed thinking of chocolate pancakes and oatmeal and the like… Buuuuutt I have a final tomorrow. And I would hate to do my first treat any kind of disservice by rushing it and not relaxing to eat it. Plus, I’m kind of hoping our dinner table gets in soon so I can take some nice pictures of my future treat to be.

Instead, today’s meals were all about convenience. Food in pan. Food on plate. Food in mouth. Annnnd study time. We bought these really tasty Italian chicken sausages last weekend at the farmer’s market and I had been craving them all morning so I thought I’d make some kind of sausage and egg scramble. So I set out chopping up onions, red peppers, kale, mushrooms and I found that my pile of veggies would need about 5 eggs to have a decent scramble texture… I don’t know if I’m just weird but I hate when I have more veggie than egg. It’s not a scramble any more and you can barely notice the eggs! I mean look at this:

 

So I just made a bed of vegetables and fried two eggs (sunny side up – the best way to fry eggs of course!) and plunked em down. Super quick, super satisfying and ridiculously filling.

Ingredients:

  • 1 Red Pepper
  • 1 Italian Chicken Sausage (Don’t have sausage? Use browned ground meat!)
  • 1/2 cup chopped kale
  • 1/2 onion, diced
  • 2 cloves garlic
  • 2 eggs
  • 2T cooking fat of choice
  • 1/2 cup mushrooms, diced
  • 1T dried oregano
  1. First things first, you want to fry your sausage. I used around 1T coconut oil and fried all four that came in the package in my skillet. I figured I could use the fat that came off to fry the veggies.
  2. Once your sausage is cooked, remove from skillet and add mushrooms, garlic, onion, red pepper and kale. Fry for about 5 minutes, then add oregano. Fry some more! You want everything to be nice and soft and oh so fragrant!
  3. Transfer the mixture to a plate.

  1. Next, fry yourself some eggs however you like them and place them on the bed of vegetables. I love my yolks runny! I like to puncture them with a fork and let the yolk run allll over everything else on my plate. Simple, but filling! Hope you like it.
